Orange and Poppy Seed Waffles

More waffle madness as inspired by Symmetry Breakfast

Orange and poppy seed waffles

1 1/2 cups oat flour* (use gluten-free oats if required)
2 tsp baking powder
1/2 tsp salt
Pinch of cinnamon
1/4 cup poppy seeds
3/4 cup almond milk
125g melted butter (or coconut oil for vegan waffles)
Juice and grated rind of one orange
*To make oat flour: grind oats in food processor until they resemble a flour.
  1. Combine dry ingredients
  2. Gradually add almond milk, butter/oil and orange juice and rind
  3. Let the batter rest for 10 minutes and preheat waffle press
  4. Pour 3/4-1 cup batter into press (may vary between models) and cook until golden
  5. Top with sliced orange
