Energy Balls

I recently got my hands on Luke and Scott’s “Clean Living” and I couldn’t wait to try out a new recipe. “Cacao-nut Crunch Clusters” caught my eye but I didn’t have all the ingredients so I modified it a little hehehe.
Here’s my version!

Choc-nut Energy Balls
2 tbsp coconut oil
1/3 cup maple syrup
1/3 cup tahini
1 tsp vanilla extract
1 cup desiccated coconut
1 cup rolled oats (to make paleo exclude oats and use 2 cups coconut)
1 tbsp chia seeds
1/4 cup cocoa powder
1/4 cup chopped walnuts
1/4 cup slivered almonds

Carefully melt coconut oil and tahini in the microwave – I used two 30 second intervals on high stirring in between
Add maple syrup, vanilla and mix with a whisk (my tahini was lumpy)
Stir in cocoa then other dry ingredients
Wet hands and roll 1-2 tbsp of mixture into balls
Allow to harden in fridge or freezer
